Spicy Pineapple Zucchini Bread

Ingredients

• 3 eggs
• 1 c salad oil
• 2 c sugar
• 2 tsp vanilla
• 2 c coarsely shredded zucchini about 4 c
• 3 c all-purpose flour
• 2 tsp baking soda
• 1 tsp salt
• 12 tsp baking powder
• 1 12 tsp ground cinnamon
• 14 tsp ground nutmeg
• 1 c each currants and chopped walnuts

Directions

1. In a large bowl beat eggs until frothy
2. Add oil sugar and vanilla
3. Beat well
4. Stir in zucchini and pineapple
