Spicy Pineapple Zucchini Bread
Ingredients
- 3 eggs
- 1 c salad oil
- 2 c sugar
- 2 tsp vanilla
- 2 c coarsely shredded zucchini about 4 c
- 3 c all-purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 12 tsp baking powder
- 1 12 tsp ground cinnamon
- 14 tsp ground nutmeg
- 1 c each currants and chopped walnuts
Directions
- In a large bowl beat eggs until frothy
- Add oil sugar and vanilla
- Beat well
- Stir in zucchini and pineapple
