Spicy Tomato Juice
Ingredients
- 15 lb tomatoes 8 qt
- 2 c chopped celery
- 3 large onions chopped
- 12 c lemon juice
- 14 c sugar
- 2 Tbsp salt
- 1 Tbsp horseradish or more
- 1 Tbsp Worcestershire
- 12 tsp hot pepper sauce
Directions
- Wash tomatoes
- Remove cores and chop
- Combine tomatoes onions and celery and bring to a boil
- Continue cooking and stirring for 20 minutes
- Press through a food mill
- Heat almost until boiling
- Stir in other ingredients
- Adjust seasonings to taste
- Process in pints or quarts for 35 minutes
- Makes 6 quarts
