Spinach-Rice Casserole
Ingredients
- 34 c brown rice
- 2 c vegetable broth
- 12 c grated Cheddar cheese
- 2 Tbsp minced fresh parsley
- 1 lb fresh spinach washed and chopped
- 14 tsp garlic powder
- 14 tsp black pepper
- 2 eggs beaten
- 4 Tbsp finely grated fresh Parmesan cheese
- 2 Tbsp melted butter
- 12 c fresh whole wheat bread crumbs
Directions
- Cook for 40 minutes the brown rice and vegetable broth Prepare the Cheddar cheese parsley and fresh spinach while rice is cooking
- After rice has cooked 30 minutes preheat oven to 350 Mix cooked rice with the Cheddar cheese mixture adding garlic powder black pepper and eggs
- Spoon mixture into greased casserole dish
- Top with mixture of Parmesan cheese melted butter and bread crumbs
- Bake at 350 for 35 minutes
