Spinach-Rice Casserole

Ingredients

  • 34 c brown rice
  • 2 c vegetable broth
  • 12 c grated Cheddar cheese
  • 2 Tbsp minced fresh parsley
  • 1 lb fresh spinach washed and chopped
  • 14 tsp garlic powder
  • 14 tsp black pepper
  • 2 eggs beaten
  • 4 Tbsp finely grated fresh Parmesan cheese
  • 2 Tbsp melted butter
  • 12 c fresh whole wheat bread crumbs

Directions

  1. Cook for 40 minutes the brown rice and vegetable broth Prepare the Cheddar cheese parsley and fresh spinach while rice is cooking
  2. After rice has cooked 30 minutes preheat oven to 350 Mix cooked rice with the Cheddar cheese mixture adding garlic powder black pepper and eggs
  3. Spoon mixture into greased casserole dish
  4. Top with mixture of Parmesan cheese melted butter and bread crumbs
  5. Bake at 350 for 35 minutes
