Spinach-Stuffed Shells

Ingredients

  • 1 small onion diced
  • 2 14 12 oz cans whole tomatoes undrained
  • 1 6 oz can tomato paste
  • 1 8 oz can tomato sauce
  • 2 tsp brown sugar
  • 12 tsp salt
  • 14 tsp pepper
  • 1 tsp dried whole oregano
  • 24 jumbo shells
  • 2 10 oz pkg frozen chopped spinach thawed and drained
  • 1 16 oz cottage cheese
  • 1 c Mozzarella
  • 14 tsp pepper

Directions

  1. Place a large saucepan over medium heat
  2. Spray with cooking spray and saute onion until tender
  3. Add tomatoes and next 6 ingredients and stir well
  4. Bring to boil cover and simmer for 20 minutes stirring occasionally
  5. Cook the shells and drain
