Spinach-Stuffed Shells
Ingredients
- 1 small onion diced
- 2 14 12 oz cans whole tomatoes undrained
- 1 6 oz can tomato paste
- 1 8 oz can tomato sauce
- 2 tsp brown sugar
- 12 tsp salt
- 14 tsp pepper
- 1 tsp dried whole oregano
- 24 jumbo shells
- 2 10 oz pkg frozen chopped spinach thawed and drained
- 1 16 oz cottage cheese
- 1 c Mozzarella
- 14 tsp pepper
Directions
- Place a large saucepan over medium heat
- Spray with cooking spray and saute onion until tender
- Add tomatoes and next 6 ingredients and stir well
- Bring to boil cover and simmer for 20 minutes stirring occasionally
- Cook the shells and drain
