Spinach Balls With Mustard Sauce

Ingredients

  • 2 10 oz pkg frozen spinach chopped thawed and squeezed dry
  • 2 c stuffing mix crushed
  • 1 c grated Parmesan cheese
  • 1 stick butter melted
  • 4 scallions finely chopped
  • 3 eggs
  • dash of freshly grated nutmeg
  • 12 c powdered dry mustard
  • 12 c white vinegar
  • 14 c sugar
  • 1 egg yolk

Directions

  1. Combine spinach stuffing mix cheese butter scallions 3 eggs and nutmeg
  2. Shape into 1-inch balls
  3. Refrigerate or freeze until ready to use
  4. Bake on greased baking sheet at 350 until golden brown 10 to 15 minutes if thawed and 20 minutes if frozen
  5. Makes 70 balls
