Spinach Balls With Mustard Sauce
Ingredients
- 2 10 oz pkg frozen spinach chopped thawed and squeezed dry
- 2 c stuffing mix crushed
- 1 c grated Parmesan cheese
- 1 stick butter melted
- 4 scallions finely chopped
- 3 eggs
- dash of freshly grated nutmeg
- 12 c powdered dry mustard
- 12 c white vinegar
- 14 c sugar
- 1 egg yolk
Directions
- Combine spinach stuffing mix cheese butter scallions 3 eggs and nutmeg
- Shape into 1-inch balls
- Refrigerate or freeze until ready to use
- Bake on greased baking sheet at 350 until golden brown 10 to 15 minutes if thawed and 20 minutes if frozen
- Makes 70 balls
