Spinach Bisque

Spinach Bisque

Ingredients

  • 12 c chopped onion
  • 2 Tbsp margarine
  • 13 c all purpose flour
  • 12 to 1 tsp salt
  • 18 tsp nutmeg
  • 2 12 c milk
  • 1 c water
  • 34 c cubed American cheese
  • 1 pkg 10 oz frozen chopped spinach thawed and drained
  • oyster crackers optional

Directions

  1. In 3 quart saucepan saute onion in butter until tender Stir in flour salt and nutmeg until smooth
  2. Gradually whisk in milk and water
  3. Add cheese cook and stir over medium heat until melted
  4. Add spinach cover and simmer for 4 to 5 minutes or until heated through
  5. Serve with oyster crackers if desired
  6. Yield 5 to 6 servings
