Spinach Bites And Lemon Mayonnaise

Ingredients

• 1 10 oz frozen chopped spinach thawed and drained well
• 1 c herb seasoned stuffing mix
• 12 c grated Parmesan cheese
• 2 eggs slightly beaten
• 13 c butter or margarine
• 1 Tbsp instant minced onion
• dash of ground nutmeg
• 12 c real mayonnaise
• 1 Tbsp fresh lemon juice
• 1 tsp sugar
• 1 tsp Dijon mustard
• dash of hot pepper sauce
• 14 c sour cream

Directions

1. Lightly grease baking sheets
2. In a small bowl mix spinach stuffing mix cheese eggs margarine onion and nutmeg
3. Shape into walnut size balls
4. Place on baking sheets
5. Cover and refrigerate at least 4 hours or until ready to bake
