Spinach Cornbread

Ingredients

• 1 pkg Jiffy cornbread mix
• 2 eggs
• 34 c melted butter or margarine
• 1 finely chopped small onion
• 6 oz carton cottage cheese
• 1 10 oz pkg frozen chopped spinach thawed and drained

Directions

1. Melt margarine in pie plate
2. Mix all ingredients well and pour into pan
3. Bake at 400 for 1 hour
