Spinach Cream Cheese Sandwich Mix

Ingredients

• 12 12 oz pkg chopped spinach raw
• 8 oz cream cheese
• 1 can sliced water chestnuts chopped
• 14 c onion chopped fine
• 12 c mayonnaise
• 12 c sour cream
• 12 tsp lemon juice
• 1 pkg dry Knorr vegetable soup mix or Lipton or Knorr onion soup mix
• 12 can ripe olives drained and chopped optional

Directions

1. Squeeze spinach very dry
2. Let cream cheese become very soft Mix all ingredients and let stand overnight in the refrigerator Can use lite cream cheese and lite sour cream but not lite mayonnaise
3. Spread on bread for either 1 or 2 slice sandwiches Makes 12 to 15 sandwiches
