Spinach Gnocchi
Ingredients
- 1 medium potato
- 12 tsp salt
- 1 egg
- 1 15 oz can spinach drained
- 1 13 c flour
- 12 tsp pepper
- grated Parmesan cheese
- 2 Tbsp butter
- 1 onion chopped
- 1 c whipping cream
Directions
- Boil potato until tender cool slightly and mash
- Stir in salt egg spinach and flour to make a stiff dough
- Add more flour if you need to
- Shape into 1-inch balls
- Heat butter in a 10-inch skillet on medium heat
- Saute onions stir in cream and pepper
- Heat to boiling reduce heat and simmer 10 minutes until thickened
- Heat 4 quarts of water to a boil with 1 tablespoon salt
- Add 12 of gnocchi
- When they rise to top boil for 4 minutes
- Remove and drain
- Repeat with other gnocchi
- Mix into cream sauce and top with grated cheese
