Spinach Gnocchi

Spinach Gnocchi

Ingredients

  • 1 medium potato
  • 12 tsp salt
  • 1 egg
  • 1 15 oz can spinach drained
  • 1 13 c flour
  • 12 tsp pepper
  • grated Parmesan cheese
  • 2 Tbsp butter
  • 1 onion chopped
  • 1 c whipping cream

Directions

  1. Boil potato until tender cool slightly and mash
  2. Stir in salt egg spinach and flour to make a stiff dough
  3. Add more flour if you need to
  4. Shape into 1-inch balls
  5. Heat butter in a 10-inch skillet on medium heat
  6. Saute onions stir in cream and pepper
  7. Heat to boiling reduce heat and simmer 10 minutes until thickened
  8. Heat 4 quarts of water to a boil with 1 tablespoon salt
  9. Add 12 of gnocchi
  10. When they rise to top boil for 4 minutes
  11. Remove and drain
  12. Repeat with other gnocchi
  13. Mix into cream sauce and top with grated cheese
