Spinach Lasagna
Ingredients
- 1 medium onion chopped
- 2 garlic cloves minced
- 1 Tbsp olive oil
- 2 to 3 Tbsp water
- 1 lb Ricotta cheese
- 1 lb tofu optional
- 14 c Parmesan cheese
- 1 pkg frozen chopped spinach thawed and drained
- 2 egg whites
- 14 tsp pepper
- 3 Tbsp parsley
- 12 lb lasagna noodles
- 6 oz Mozzarella grated
- 6 c tomato sauce
Directions
- Saute the onion and garlic in the olive oil adding water as needed to keep from sticking
- Combine the Ricotta tofu Parmesan spinach egg whites beaten black pepper parsley and sauteed onion and garlic mixing well
- Cook the lasagna according to package directions
