Spinach Lasagne
Ingredients
- 1 medium onion chopped
- 12 green pepper chopped
- 2 cloves garlic minced
- 2 Tbsp oil
- 1 28 oz can tomatoes
- 1 6 oz can tomato paste
- 14 c minced parsley
- 12 tsp oregano
- 1 bay leaf
- 12 16 oz box lasagne noodles
- 1 10 oz pkg frozen spinach cooked and drained
- 1 lb Ricotta cheese
- 1 egg
- 34 c grated Parmesan cheese
- 14 tsp pepper
- salt to taste
- 12 lb grated Mozzarella cheese
Directions
- Saute onions green peppers and garlic in oil until golden stirring often
- Stir in tomatoes tomato paste parsley oregano and bay leaf
- Simmer uncovered for 20 minutes
- Cook noodles according to package directions and drain
- Combine spinach Ricotta egg 14 cup of Parmesan cheese salt and pepper
