Spinach Madeline
Ingredients
- 3 pkg frozen chopped spinach
- 6 Tbsp butter or oleo
- 3 Tbsp flour
- 3 Tbsp onion chopped
- 34 c half and half
- 34 c vegetable liquid
- 34 tsp black pepper
- 12 tsp salt
- 9 oz jalapeno cheese
- pepper to taste red
Directions
- Cook spinach according to directions Drain and reserve liquid
- Melt butter or oleo in saucepan over low heat Add flour and stir until well blended but not brown Add onion and cook until soft and clear
- Add liquid slowly stirring constantly until smooth and thick Continue stirring Add seasoning and cheese which has been cut into small pieces
- Stir until melted Combine spinach Pour into casserole and top with buttered bread crumbs
- Bake at 350 until bubbly
