Spinach Smoked Salmon And Cheddar Cheese Ball

Ingredients
- 1 c butter divided
- 1 c flour divided
- 1 qt chicken stock
- 12 lb sliced mushrooms sauteed
- 1 c heavy cream
- 1 12 c Grey Poupon Dijon mustard divided
- 12 lb onion chopped
- 1 12 Tbsp olive oil
- 1 lb frozen spinach drained and chopped
- 12 c sour cream
- 1 lb smoked salmon chopped
- 14 tsp nutmeg
- 8 eggs separated
- 2 c half and half
- 12 c Cheddar cheese shredded
Directions
- In a heavy bottom saucepan melt 12 cup of butter
- Add 12 cup of flour
- Cook 5 minutes
- Add chicken stock and simmer for 30 minutes stirring often
- Strain and add sauteed mushrooms heavy cream and 1 cup of Dijon mustard simmer for 5 minutes Season with salt and pepper and hold for service
