Spinach Smoked Salmon And Cheddar Cheese Ball

Ingredients

  • 1 c butter divided
  • 1 c flour divided
  • 1 qt chicken stock
  • 12 lb sliced mushrooms sauteed
  • 1 c heavy cream
  • 1 12 c Grey Poupon Dijon mustard divided
  • 12 lb onion chopped
  • 1 12 Tbsp olive oil
  • 1 lb frozen spinach drained and chopped
  • 12 c sour cream
  • 1 lb smoked salmon chopped
  • 14 tsp nutmeg
  • 8 eggs separated
  • 2 c half and half
  • 12 c Cheddar cheese shredded

Directions

  1. In a heavy bottom saucepan melt 12 cup of butter
  2. Add 12 cup of flour
  3. Cook 5 minutes
  4. Add chicken stock and simmer for 30 minutes stirring often
  5. Strain and add sauteed mushrooms heavy cream and 1 cup of Dijon mustard simmer for 5 minutes Season with salt and pepper and hold for service
