Spinach Souffle

Ingredients
- 2 Tbsp margarine
- 2 Tbsp flour
- 12 tsp salt
- 12 c skim milk
- 12 pkg frozen chopped spinach cooked and drained
- 1 Tbsp finely chopped onion
- 34 c Egg Beaters
Directions
- Melt margarine
- Blend in flour and salt
- Cook over low heat stir until smooth and bubbly
- Remove from heat and gradually stir in milk
- Return to heat and bring to boil stirring constantly Cook 1 minute
- Remove from heat
- Stir in spinach and onion Beat Egg Beaters fold in spinach mixture
- Put in greased casserole
- Bake at 325 for 50 minutes
