Spinach Souffle

Spinach Souffle

Ingredients

  • 2 Tbsp margarine
  • 2 Tbsp flour
  • 12 tsp salt
  • 12 c skim milk
  • 12 pkg frozen chopped spinach cooked and drained
  • 1 Tbsp finely chopped onion
  • 34 c Egg Beaters

Directions

  1. Melt margarine
  2. Blend in flour and salt
  3. Cook over low heat stir until smooth and bubbly
  4. Remove from heat and gradually stir in milk
  5. Return to heat and bring to boil stirring constantly Cook 1 minute
  6. Remove from heat
  7. Stir in spinach and onion Beat Egg Beaters fold in spinach mixture
  8. Put in greased casserole
  9. Bake at 325 for 50 minutes
