Split Pea Soup

Ingredients

  • 1 lb dried split peas
  • 1 ham hock
  • 1 medium onion finely chopped
  • salt and pepper to taste
  • 2 qt water
  • 1 c celery finely chopped
  • 2 carrots finely chopped or shredded

Directions

  1. Combine peas and water
  2. Bring to a boil and boil 2 minutes Remove from heat
  3. Cover and let set for 1 hour
  4. Add remaining ingredients
  5. Bring to boiling point
  6. Reduce heat and simmer 2 12 to 3 hours or until peas look creamed and ham hock is tender Remove ham hock
  7. Trim meat from bone and dice
  8. Return meat to soup
  9. Heat thoroughly and serve
  10. Additional water or milk may be added to soup for a thinner consistency
