Spoon Bread

Ingredients

  • 2 14 c milk
  • 2 Tbsp butter
  • 1 tsp salt
  • 23 c corn meal
  • 3 eggs separated

Directions

  1. Heat milk to scalding
  2. Add butter and salt slowly
  3. Stir in corn meal
  4. Boil gently for 1 minute stirring constantly
  5. Remove from heat
  6. Cool 5 minutes then stir in well beaten egg yolks Fold in stiffly beaten egg whites
  7. Pour into greased 5 cup casserole and bake in a 375 oven for 35 to 40 minutes
  8. Serve spooned from dish with butter
  9. Makes 5 servings
