Spoon Bread
Ingredients
- 2 14 c milk
- 2 Tbsp butter
- 1 tsp salt
- 23 c corn meal
- 3 eggs separated
Directions
- Heat milk to scalding
- Add butter and salt slowly
- Stir in corn meal
- Boil gently for 1 minute stirring constantly
- Remove from heat
- Cool 5 minutes then stir in well beaten egg yolks Fold in stiffly beaten egg whites
- Pour into greased 5 cup casserole and bake in a 375 oven for 35 to 40 minutes
- Serve spooned from dish with butter
- Makes 5 servings
