Spoon Corn Bread

Ingredients

  • 1 c white corn meal
  • 3 c milk
  • 2 Tbsp shortening
  • 3 eggs well beaten
  • 1 12 tsp salt
  • 3 tsp baking powder

Directions

  1. Preheat oven to 450
  2. Combine corn meal shortening and 2 cups of milk in a pan over medium heat
  3. Bring mixture just to a boil stirring constantly
  4. Blend beaten eggs salt and remaining milk
  5. Add to corn meal mixture
  6. Mix well
  7. Stir in baking powder
  8. Pour into greased 1 12 to 2-quart casserole
  9. Bake 25 to 30 minutes
  10. Serve hot with butter
