Spring Salad

Ingredients
- 8 oz green beans trimmed
- 1 c celery sliced
- 1 lb fresh spinach torn into bite-size pieces
- 1 medium green pepper cut into rings
- 1 medium yellow pepper cut into rings
- 1 small onion thinly sliced 12 c
- 4 Tbsp Parmesan cheese grated
- 5 Tbsp Italian dressing
- 12 tsp salt
- 14 tsp dried oregano leaves or dill
- fresh ground black pepper to taste
Directions
- Blanch green beans in boiling water for 5 minutes until tender-crisp
- Rinse under cold water and drain
- Rinse spinach thoroughly and drain
- Tear into bite-size pieces
- In a large bowl toss all ingredients together until well blended
- Makes 6 to 8 servings
- Very tasty
