Squash Croquettes

Ingredients
- 2 c finely chopped yellow squash
- 1 c finely chopped onion
- 1 c finely chopped green pepper
- 1 egg beaten
- 1 tsp salt
- 1 tsp black pepper
- 12 c plus 1 Tbsp all-purpose flour unsifted
Directions
- Combine first 5 ingredients mix well
- Stir in flour drop by tablespoons into 12-inch hot oil
- Cook until browned turning once
- Drain on paper towel
- Yields 6 servings
