Squash Fritters
Ingredients
- 3 c yellow squash sliced
- 1 12 tsp salt
- 2 eggs
- 1 Tbsp butter
- crushed cracker crumbs
- cooking oil
Directions
- Cover squash with enough water to cover
- Boil until tender and add salt and pepper
- When tender drain and add 2 eggs and butter
- Mix ingredients with enough crushed crackers to make the mixture into patties then roll in crushed cracker crumbs and youre ready to deep-fry in hot oil
- Cook until golden brown and serve
