Squash Fritters

Ingredients
- 2 c cooked mashed yellow squash
- 2 eggs beaten
- 1 small onion chopped
- salt and pepper to taste
- 12 c cracker crumbs
Directions
- Combine squash eggs onion seasonings and cracker crumbs mix well
- Drop mixture by tablespoonfuls into hot oil
- Cook until golden brown turning once
- Yield 6 servings
