Squash Pancakes

Squash Pancakes

Ingredients

  • 2 12 c cooked squash yellow crookneck
  • 14 c corn meal plain
  • 14 c flour plain
  • 12 tsp salt
  • 2 tsp baking powder
  • 1 small chopped onion

Directions

  1. Cook unpeeled squash until tender
  2. Drain and then add all other ingredients
  3. Mix and then fry in hot oil until brown turning like a pancake
  4. If you like you may add jalapeno peppers to mixture before frying
