StacyS Marinated Potato Salad
Ingredients
- 3 lb cooked potatoes quartered use red potatoes
- 12 c Italian salad dressing the bottled type
- 12 c sliced green onions
- 14 c chopped parsley
- 1 c mayonnaise
- sliced hard-boiled eggs
Directions
- Leave skin on potatoes when boiling
- Put in large bowl when boiled and after drained
- Make the following to pour over while potatoes are still warm
- Italian salad dressing sliced green onions and chopped parsley
- Pour over the warm bite-size potatoes and let set for about 1 hour to marinate
- Toss several times Then add the mayonnaise
- Toss until completely covered
- Put in fridge for at least 2 hours
- Better to chill overnight so flavors have plenty of time to blend
- Just before serving garnish with sliced hard-boiled eggs
- Great
