Steak And Potato Casserole

Ingredients
- 2 12 lb round steak 12 to 34-inch thick
- 14 c flour
- 3 tsp salt
- 12 tsp pepper
- 14 c oil
- 3 12 c water
- 8 medium carrots thinly sliced
- 8 medium potatoes thinly sliced
- 1 38 oz envelope onion soup mix
- chopped parsley for garnish
Directions
- Preheat oven to 325
- Cut meat into 6 to 8 serving pieces Trim fat and bone
- Pound mixture of flour salt and pepper into meat
- Use meat mallet or heavy saucer
- Brown meat in heavy skillet in hot oil using medium heat
- Do not crowd pieces Arrange browned meat in a 3-quart casserole dish
- Place carrots and potatoes on top
- Sprinkle with onion soup mix and pour over it 3 12 cups water
- Bake covered 2 hours or until tender If you wish thicken with 2 tablespoons flour mixed with 1 tablespoons butter
- Form into balls and drop into casserole dish Return to oven for 10 minutes
- Sprinkle with parsley and serve
