Steak Soup Kansas Style

Ingredients

  • 1 lb round steak minced
  • 1 c butter or margarine
  • 1 c all-purpose flour
  • 1 medium onion chopped
  • 1 large carrot chopped
  • 3 stalks celery chopped
  • 1 can tomatoes chopped
  • 3 qt beef stock or consomme
  • 1 Tbsp Worcestershire sauce
  • salt to taste
  • pepper to taste
  • 1 12 c light cream or half and half

Directions

  1. Brown meat in butter stir in flour until smooth
  2. Add onion carrot and celery cook 10 minutes stirring often
  3. Add remaining ingredients except cream bring to a boil
  4. Simmer 1 to 3 hours The longer the soup cooks the better it is
  5. Add cream during last 5 minutes of cooking
