Steamed Spinach

Ingredients

• 4 pkg frozen spinach
• 1 tsp salt
• 3 eggs separated
• 23 c breadcrumbs
• 1 small onion
• 1 tsp black pepper
• 14 lb butter

Directions

1. Squeeze and dry spinach thoroughly
2. Melt butter and chop onion fine
3. Mix egg yolks with spinach and add all ingredients except egg whites
4. Beat egg whites until stiff fold into spinach
