Steamed Sponge Cakes

Ingredients
- 13 c plain flour
- 1 12 tsp baking powder
- 12 c cornmeal
- 38 c granulated sugar
- 3 to 4 oz water
- 2 Tbsp maple syrup
Directions
- Bring water to a boil
- Add sugar and cook until it dissolves Remove mixture to cool for later use
- Sieve plain flour and baking powder into a mixing bowl
- Slowly blend in syrup and stir well to form a batter
- Add cornmeal and mix well
- Let mixture sit awhile Pour the above cornmeal batter into small greased bowls 34 full Arrange them on a steamer
- Steam them for 20 to 30 minutes until done
