Steamed Sponge Cakes

Ingredients

  • 13 c plain flour
  • 1 12 tsp baking powder
  • 12 c cornmeal
  • 38 c granulated sugar
  • 3 to 4 oz water
  • 2 Tbsp maple syrup

Directions

  1. Bring water to a boil
  2. Add sugar and cook until it dissolves Remove mixture to cool for later use
  3. Sieve plain flour and baking powder into a mixing bowl
  4. Slowly blend in syrup and stir well to form a batter
  5. Add cornmeal and mix well
  6. Let mixture sit awhile Pour the above cornmeal batter into small greased bowls 34 full Arrange them on a steamer
  7. Steam them for 20 to 30 minutes until done
