Stewed Chicken

Ingredients

  • 4 lb stewing chicken cut up
  • 1 sprig parsley
  • 12 c chopped celery
  • 1 medium carrot sliced
  • 1 small onion sliced
  • 2 tsp salt
  • 12 tsp pepper

Directions

  1. Remove any excess pieces of fat from chicken
  2. Place chicken giblets and neck in kettle
  3. Add just enough water to cover
  4. Add remaining ingredients
  5. Heat to boiling reduce heat
  6. Cover and simmer until thickest pieces are tender 2 12 to 3 12 hours
  7. If not serving immediately refrigerate chicken in broth until cool
