Stir-Fry Cashew Chicken
Ingredients
- 4 chicken breasts boneless skinless and sliced
- 1 clove garlic chopped
- 3 green onions including tops chopped
- 1 medium green pepper sliced
- 12 lb fresh mushrooms sliced
- 14 c soy sauce
- 34 tsp sugar
- 2 Tbsp cornstarch
- 34 c chicken broth
- 5 Tbsp vegetable oil
- 34 c cashew nuts
Directions
- Stir together soy sauce sugar cornstarch and chicken broth In wok or frypan stir-fry chicken for about 3 minutes
- Add garlic green onions green pepper and mushrooms and continue to stir-fry for about 2 minutes
- Lower heat and stir in soy sauce mixture
- Cook until sauce thickens
- Serve hot over cooked rice Sprinkle with cashew nuts
