Stir-Fry Cashew Chicken

Ingredients

  • 4 chicken breasts boneless skinless and sliced
  • 1 clove garlic chopped
  • 3 green onions including tops chopped
  • 1 medium green pepper sliced
  • 12 lb fresh mushrooms sliced
  • 14 c soy sauce
  • 34 tsp sugar
  • 2 Tbsp cornstarch
  • 34 c chicken broth
  • 5 Tbsp vegetable oil
  • 34 c cashew nuts

Directions

  1. Stir together soy sauce sugar cornstarch and chicken broth In wok or frypan stir-fry chicken for about 3 minutes
  2. Add garlic green onions green pepper and mushrooms and continue to stir-fry for about 2 minutes
  3. Lower heat and stir in soy sauce mixture
  4. Cook until sauce thickens
  5. Serve hot over cooked rice Sprinkle with cashew nuts
