Strawberry-Rhubarb Sauce

Ingredients

  • 1 12 c fresh or frozen chopped rhubarb
  • 12 c sugar
  • 2 Tbsp water
  • 12 tsp ground cardamon or cinnamon
  • 1 Tbsp cold water
  • 1 12 tsp cornstarch
  • 1 12 c sliced strawberries

Directions

  1. In a 2-quart saucepan combine rhubarb sugar 2 tablespoons water and cardamon or cinnamon
  2. Bring to boiling reduce heat Cover and simmer about 5 minutes or until fruit is tender
  3. Stir together the 1 tablespoon water and cornstarch
  4. Add to rhubarb mixture
  5. Cook and stir over medium heat until thickened and bubbly
  6. Cook and stir for 2 minutes more
  7. Stir in strawberries Serve warm over ice cream
  8. Makes 2 cups
