Strawberry Charlotte Russe

Ingredients

  • 2 3 oz pkg strawberry-flavored gelatin
  • 2 c boiling water
  • 1 12 c crushed strawberries fresh or frozen
  • 1 Tbsp lemon juice
  • 12 c sugar
  • 18 tsp salt
  • 2 c heavy cream whipped
  • ladyfingers

Directions

  1. Put gelatin in a large bowl add boiling water and stir until dissolved
  2. Combine strawberries lemon juice sugar and salt stir until sugar is dissolved
  3. Combine with gelatin mixture Chill to consistency of beaten egg whites
  4. Fold in whipped cream Line side of spring-form pan with ladyfingers
  5. Carefully spoon mixture into pan and chill for 4 to 5 hours
  6. Decorate top with additional strawberries and whipped cream if desired
