Strawberry Charlotte Russe

Ingredients
- 2 3 oz pkg strawberry-flavored gelatin
- 2 c boiling water
- 1 12 c crushed strawberries fresh or frozen
- 1 Tbsp lemon juice
- 12 c sugar
- 18 tsp salt
- 2 c heavy cream whipped
- ladyfingers
Directions
- Put gelatin in a large bowl add boiling water and stir until dissolved
- Combine strawberries lemon juice sugar and salt stir until sugar is dissolved
- Combine with gelatin mixture Chill to consistency of beaten egg whites
- Fold in whipped cream Line side of spring-form pan with ladyfingers
- Carefully spoon mixture into pan and chill for 4 to 5 hours
- Decorate top with additional strawberries and whipped cream if desired
