Strawberry Meringue Cookies
Ingredients
- 4 large egg whites
- 1 c sugar
- 6 drops red food coloring
- 18 tsp salt
- 1 tsp imitation strawberry flavoring
Directions
- Preheat oven to 200
- Line 2 baking sheets with parchment paper
- Combine egg whites and salt in a large bowl
- Beat with an electric mixer on a medium-high speed until soft peaks form 1 to 2 minutes
- Increase speed to high
- Add sugar gradually in a slow steady stream beating until stiff shiny peaks form 2 to 4 minutes
- Add strawberry flavoring and food coloring mix until just combined
- Spoon meringue mixture into pastry bag fitted with star tip
- Pipe meringue into 2-inch mounds on prepared baking sheets
- Bake until cookies are dry and crisp about 1 hour and 35 minutes
- Turn off oven let cookies stand in oven with door closed for 5 minutes
- Remove from oven cool 3 minutes
- Remove from parchment paper place on wire rack to cool completely
