Strawberry Shortcut Cake

Ingredients

  • 1 c miniature marshmallows
  • 3 oz pkg strawberry gelatin
  • 1 12 c shortening
  • 3 tsp baking powder
  • 12 tsp salt
  • 2 c frozen sliced strawberries in syrup
  • 2 14 c flour
  • 1 tsp vanilla
  • 3 eggs
  • 1 c milk

Directions

  1. Generously grease bottom of 13 x 9-inch pan
  2. Spread marshmallows evenly over bottom of pan
  3. Blend thawed strawberries syrup and dry gelatin set aside
  4. In large bowl combine remaining ingredients
  5. Blend at low speed until moistened beat 3 minutes at medium speed
  6. Pour evenly over marshmallows
  7. Spoon strawberry mixture evenly over batter
  8. Bake at 350 for 45 to 50 minutes until golden brown and toothpick comes out clean
