Strawberry Upside-Down Cake

Ingredients

  • 34 c butter or margarine
  • sugar
  • 1 pt strawberries washed and hulled
  • 1 tsp grated lemon rind
  • 1 tsp cornstarch
  • 1 egg
  • 1 12 sifted flour
  • 2 tsp baking powder
  • 12 tsp salt
  • 12 c milk

Directions

  1. Melt 14 cup butter in 9-inch square pan
  2. Mix 12 cup butter add 12 cup sugar and beat until light
  3. Add egg and beat well Sift flour baking powder and salt and add to first mixture with milk beating until smooth
  4. Carefully spread on berries
  5. Bake in oven 375 about 30 minutes
  6. Let stand 10 minutes turn out on serving dish
  7. Serve at once with cream if desired
