Stuffed Acorn Squash
Ingredients
- 1 small acorn squash
- 6 oz lean pork
- 14 c chopped celery
- 14 c chopped onion
- 14 tsp salt
- 14 tsp curry powder
- dash of cinnamon
- 12 c unsweetened applesauce
- 1 slice cubed whole wheat bread
Directions
- Cut squash in half remove seeds and bake cut-side down at 350 for 50 minutes
- In skillet cook pork celery and onion until meat is no longer pink and vegetables are tender
- Drain fat
- Stir in salt curry powder and cinnamon
- Cook 1 minute more
- Stir in applesauce and bread cubes
- Place stuffing in squash halves bake uncovered 20 minutes more
- Makes 2 servings
