Stuffed Acorn Squash

Ingredients

  • 1 small acorn squash
  • 6 oz lean pork
  • 14 c chopped celery
  • 14 c chopped onion
  • 14 tsp salt
  • 14 tsp curry powder
  • dash of cinnamon
  • 12 c unsweetened applesauce
  • 1 slice cubed whole wheat bread

Directions

  1. Cut squash in half remove seeds and bake cut-side down at 350 for 50 minutes
  2. In skillet cook pork celery and onion until meat is no longer pink and vegetables are tender
  3. Drain fat
  4. Stir in salt curry powder and cinnamon
  5. Cook 1 minute more
  6. Stir in applesauce and bread cubes
  7. Place stuffing in squash halves bake uncovered 20 minutes more
  8. Makes 2 servings
