Stuffed Bacon Rolls

Ingredients

  • 12 slices bacon
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 egg
  • 12 c tomato sauce
  • 34 c soft bread crumbs
  • 1 4 oz can sliced mushrooms drained
  • 2 Tbsp snipped parsley
  • 1 lb ground beef
  • 14 tsp salt
  • 18 tsp pepper

Directions

  1. Partially cook bacon
  2. Drain reserve 2 tablespoons drippings Set bacon aside
  3. Cook onion and garlic in reserved drippings until tender but not brown
  4. In bowl add all ingredients except bacon
  5. Mix well
  6. Divide into 4 parts
  7. Place 2 slices of bacon side by side on wax paper
  8. Cut another slice in half crosswise Place 2 half slices at one end of bacon slices overlapping slightly
  9. Pat 14 of meat mixture evenly over bacon
  10. Roll up jelly-roll style starting from narrow end
