Stuffed Baked Potatoes
Ingredients
- 4 to 6 large baking potatoes
- 1 lb ground chuck
- 1 lb Velveeta cheese cubed
- 1 can Ro-Tel tomatoes with green chilies diced
- 1 pkg taco seasoning mix
- 12 to 1 c green onions finely chopped
- 8 oz sour cream
- salt and pepper
Directions
- Grease potatoes and bake for 1 12 hours at 350 or until done
- Brown hamburger meat and mix with taco seasoning mix according to package directions
- Be sure meat is drained
- In a double boiler or microwave melt Velveeta cheese mixed with Ro-Tel tomatoes
- Stir frequently
- To serve slice hot potato and lightly fluff
- Layer taco meat cheese mixture sour cream green onions and salt and pepper to taste
