Stuffed Baked Potatoes

Ingredients

• 4 to 6 large baking potatoes
• 1 lb ground chuck
• 1 lb Velveeta cheese cubed
• 1 can Ro-Tel tomatoes with green chilies diced
• 1 pkg taco seasoning mix
• 12 to 1 c green onions finely chopped
• 8 oz sour cream
• salt and pepper

Directions

1. Grease potatoes and bake for 1 12 hours at 350 or until done
2. Brown hamburger meat and mix with taco seasoning mix according to package directions
3. Be sure meat is drained
4. In a double boiler or microwave melt Velveeta cheese mixed with Ro-Tel tomatoes
5. Stir frequently
6. To serve slice hot potato and lightly fluff
7. Layer taco meat cheese mixture sour cream green onions and salt and pepper to taste
8. Yield
9. 4 to 6 servings
