Stuffed Chicken Breasts

Ingredients

  • 2 whole chicken breasts split skinned and boneless
  • 4 thin slices cooked ham
  • 4 thin slices Swiss cheese
  • 2 Tbsp oil
  • 1 can cream of broccoli soup
  • 13 c milk
  • 14 c sliced green onions
  • 18 tsp dried thyme leaves crushed

Directions

  1. Place ham and cheese slices on each breast half
  2. Roll up chicken from narrow end
  3. Secure with toothpicks
  4. In skillet heat oil and cook chicken for 10 minutes or until brown on all sides
  5. Spoon off fat
  6. Stir in remaining ingredients
  7. Heat until boiling
  8. Reduce heat to low
  9. Cover and simmer 10 minutes or until chicken is fork-tender
  10. Garnish with parsley if desired
