Stuffed Hog Maw

Ingredients

  • 1 large hog maw
  • 3 lb pork sausage
  • 1 lb hot turkey sausage
  • 1 lb turkey sausage not hot
  • 1 c celery chopped
  • 1 12 c shredded cabbage
  • 1 large onion chopped
  • 5 large potatoes diced
  • salt and pepper

Directions

  1. Clean the stomach and remove membranes
  2. Mix potatoes onion celery cabbage sausage and seasonings
  3. Stuff the stomach as tightly as you can and sew up
  4. Bake in large roaster with cover on at 325 for 3 hours
  5. Brown uncovered for last 10 minutes
  6. Gravy may be made and served with it
