Stuffed Pepper Wedges

Ingredients

  • 3 tsp olive oil
  • 1 large sweet red pepper
  • 1 large sweet green pepper
  • 1 large sweet yellow pepper
  • 1 large tomato seeded and diced
  • 14 c black olives
  • 2 cloves garlic finely chopped
  • 3 Tbsp Parmesan cheese
  • 1 Tbsp chopped parsley

Directions

  1. Preheat oven to 350
  2. Grease 13 x 9 x 2-inch baking dish with 1 teaspoon olive oil
  3. Halve core and seed peppers
  4. Cut each half into 3 lengthwise wedges Combine tomato olives garlic 2 tablespoons Parmesan cheese and parsley in a small bowl
  5. Divide mixture among pepper wedges
  6. Place pepper wedges in prepared baking dish
  7. Drizzle with remaining 2 teaspoons olive oil
  8. Bake peppers in preheated oven until tender about 30 minutes Sprinkle with remaining 1 tablespoon Parmesan cheese
  9. Bake additional 5 minutes
  10. Serve immediately or at room temperature Makes six servings
