Stuffed Potatoes
Ingredients
- 4 baking potatoes
- 34 c plain low-fat yogurt
- 34 c low-fat cottage cheese
- 1 small onion finely chopped
- 14 c fresh parsley
- 14 tsp garlic powder
- pepper and paprika to taste
Directions
- Bake the potatoes until soft
- Mix all other ingredients except paprika
- Cut the potatoes in half lengthwise
- Scrape most of the potato
- from the skins and add to the mixture Beat
- Spoon the mixture into the shells and sprinkle with paprika
- Bake in a 350 oven for 20 minutes
