Stuffed Shrimp

Stuffed Shrimp

Ingredients

  • 14 c butter
  • 1 Tbsp finely chopped onion
  • 1 Tbsp finely chopped green pepper
  • 1 tsp finely chopped celery
  • 6 slices bread crumbled
  • 12 c milk
  • 34 c crab meat
  • salt and pepper to taste
  • dash of cayenne
  • 3 doz large raw shrimp cleaned and deveined
  • 3 eggs
  • flour and cracker meal

Directions

  1. Saute onion green pepper and celery in butter until tender Soak bread in milk
  2. Combine sauteed onion pepper celery bread and crab meat
  3. Blend thoroughly and add salt pepper and cayenne Split raw shrimp almost in half
  4. Leave tail on shrimp
  5. Stuff shrimp with crab meat mixture and press halves together
  6. Dip shrimp in seasoned flour then in beaten eggs
  7. Beat one egg at a time it may not be necessary to use 3 eggs
  8. Roll shrimp in cracker meal and fry in deep hot fat about 375 until golden brown
  9. Serve with desired sauce
