Stuffed Squash

Ingredients
- 12 medium squash
- 1 lb ground beef
- 1 c long grain rice uncooked
- 1 medium onion
- 2 cans tomato paste
- 1 tsp salt or to taste
- 1 tsp pepper or to taste
Directions
- Cut necks off squash and core inside out and save
- Mix all ingredients except 1 can tomato paste and squash hulls
- Stuff squash loosely put neck in top and secure with toothpick
- Cover with water and add 1 can tomato paste
- Bring to a boil and simmer 1 hour
