Stuffed Zucchini

Stuffed Zucchini

Ingredients

  • 6 medium zucchini
  • 3 c soft breadcrumbs about 6 slices cubed
  • 12 c grated Parmesan cheese
  • 1 small onion minced
  • 3 Tbsp chopped parsley
  • 1 tsp salt
  • dash of pepper
  • 2 eggs beaten
  • 1 lb bulk Italian sausage
  • 4 oz Mozzarella cheese
  • spaghetti sauce homemade or store brand

Directions

  1. Brown sausage
  2. Wash zucchini cut off ends
  3. Do not peel Cook in boiling salted water for 5 minutes
  4. Halve lengthwise and remove pulp with spoon
  5. Combine pulp bread crumbs sausage cheese onion parsley salt pepper and eggs
  6. Fill zucchini shells and top with sauce and Mozzarella cheese
  7. Bake at 350 for 30 minutes
