Stuffed Zucchini
Ingredients
- 4 medium zucchini
- 1 c shredded cheese your choice
- 1 egg beaten
- 1 c rice already cooked
- 2 Tbsp chopped onion
- 2 Tbsp fine bread crumbs
- 2 slices cooked bacon crumbled
- salt
Directions
- Parboil zucchini about 7 minutes
- Cool
- Cut in half
- Scoop out pulp
- Chop pulp
- Mix with cheese reserving 12 cup eggs rice onion bread crumbs and salt
- Stuff shells with mixture Sprinkle with bacon
- Bake in greased baking dish at 350 for 20 to 25 minutes
- Top with cheese the last few minutes of baking
