Stuffed Zucchini
Ingredients
- 6 medium zucchini
- 3 c soft breadcrumbs about 6 slices cubed
- 12 c grated Parmesan cheese
- 1 small onion minced
- 3 Tbsp chopped parsley
- 1 tsp salt
- dash of pepper
- 2 eggs beaten
- 1 lb bulk Italian sausage
- 4 oz Mozzarella cheese
- spaghetti sauce homemade or store brand
Directions
- Brown sausage
- Wash zucchini cut off ends
- Do not peel Cook in boiling salted water for 5 minutes
- Halve lengthwise and remove pulp with spoon
- Combine pulp bread crumbs sausage cheese onion parsley salt pepper and eggs
- Fill zucchini shells and top with sauce and Mozzarella cheese
- Bake at 350 for 30 minutes
