Stuffed Zucchini

Ingredients

  • 4 medium zucchini
  • 1 c shredded cheese your choice
  • 1 egg beaten
  • 1 c rice already cooked
  • 2 Tbsp chopped onion
  • 2 Tbsp fine bread crumbs
  • 2 slices cooked bacon crumbled
  • salt

Directions

  1. Parboil zucchini about 7 minutes
  2. Cool
  3. Cut in half
  4. Scoop out pulp
  5. Chop pulp
  6. Mix with cheese reserving 12 cup eggs rice onion bread crumbs and salt
  7. Stuff shells with mixture Sprinkle with bacon
  8. Bake in greased baking dish at 350 for 20 to 25 minutes
  9. Top with cheese the last few minutes of baking
