Sugar-Free Doughnuts

Ingredients

  • 12 c shortening
  • 12 c margarine
  • 1 12 c mashed potatoes
  • 1 12 c potato water
  • 1 c artificial sweetener
  • 2 eggs beaten
  • 1 pkg yeast
  • 10 c unbleached flour
  • oil for deep frying

Directions

  1. Cream shortening and margarine in bowl
  2. Add mashed potatoes potato water sweetener and egg beat well
  3. Sprinkle with yeast Stir in gently
  4. Let stand
  5. for 1 12 hours in warm place
  6. Stir in flour gradually
  7. Knead on floured surface until smooth
  8. Let rise covered in warm place 5 to 6 hours or doubled in bulk Roll out on floured surface 12-inch thick
  9. Cut to desired size Place on floured towel
  10. Let rise in warm place 1 12 to 2 inches or until doubled in bulk
  11. Deep fry in 375
  12. oil until light brown
  13. Drain on paper towels
  14. Yields 50 doughnuts
