Summer Apple Pie

Ingredients

• 1 baked pie shell cooled
• 5 c zucchini peeled seeded and sliced thin
• 34 c sugar
• 2 Tbsp cornstarch
• 12 c lemon juice
• 14 c water
• 1 tsp cinnamon

Directions

1. Mix together in a saucepan zucchini sugar cornstarch lemon juice water and cinnamon bring to a boil
2. Cook until zucchini is tender
3. Pour into baked pie shell
