Summer Potato SaladServes 8

Ingredients
- approximately 2 lb Idaho potatoes
- 6 slices bacon
- 1 small container sour cream
- 1 tsp Dijon-style mustard
- 2 Tbsp apple cider vinegar
- 14 c minced onion
- parsley
- salt
- pepper
Directions
- Peel the potatoes and slice about 14 inch thick
- Bring to a boil for 10 minutes in salted water
- Drain
