Summer Sausage
Ingredients
- 2 lb lean ground meat
- 14 tsp salt
- 14 tsp black pepper
- 18 tsp garlic powder
- 2 Tbsp Morton Tender Quick
- 1 Tbsp whole mustard seed
- 34 c water
- 1 Tbsp liquid smoke
- cracked black pepper
Directions
- Mix all the ingredients except meat until blended
- Add meat mixing well
- Separate into 3 sausage rolls
- If you want hotter sausage you can roll the sausage in cracked black pepper
- Roll the sausage in foil separately
- Seal ends and put in refrigerator for 24 hours
- Remove foil and bake on rack in pan at 350 for 1 hour
- Makes three rolls
- Freezes well
