Summer Sausage

Ingredients

  • 2 lb lean ground meat
  • 14 tsp salt
  • 14 tsp black pepper
  • 18 tsp garlic powder
  • 2 Tbsp Morton Tender Quick
  • 1 Tbsp whole mustard seed
  • 34 c water
  • 1 Tbsp liquid smoke
  • cracked black pepper

Directions

  1. Mix all the ingredients except meat until blended
  2. Add meat mixing well
  3. Separate into 3 sausage rolls
  4. If you want hotter sausage you can roll the sausage in cracked black pepper
  5. Roll the sausage in foil separately
  6. Seal ends and put in refrigerator for 24 hours
  7. Remove foil and bake on rack in pan at 350 for 1 hour
  8. Makes three rolls
  9. Freezes well
