Sunday Glazed Carrots

Ingredients

  • 1 lb medium carrots cut in diagonal slices
  • 2 Tbsp butter
  • 14 c brown sugar packed
  • 2 Tbsp cold water
  • 1 12 tsp cornstarch
  • 14 c pecans coarsely chopped

Directions

  1. Place carrots in 1-quart casserole dish with butter and brown sugar
  2. Cover and microwave on High for 9 to 11 minutes stirring after 5 minutes
  3. Mix water and cornstarch until smooth
  4. Stir in carrot mixture
  5. Add pecans cover and microwave at High for 2 to 4 minutes until thickened
  6. Serves 3 to 4
