Sunshine Chicken

Ingredients
- 2 to 3 tsp curry powder
- 1 14 tsp salt optional
- 14 tsp pepper
- 6 chicken breast halves boned and skinned
- 1 12 c orange juice
- 1 c rice
- 34 c water
- 1 Tbsp brown sugar
- 1 tsp dry mustard
- chopped parsley
Directions
- Combine curry powder 12 teaspoon salt and pepper
- Sprinkle over chicken
- Rub seasonings onto top and bottom surfaces of each chicken piece and set aside
- In 10-inch skillet combine orange juice rice water brown sugar mustard and remaining 34 teaspoon salt
- Mix well
- Arrange chicken pieces over rice Bring to a boil
- Cover and simmer 20 minutes
- Remove from heat and let stand covered until liquid is absorbed about 5 minutes Sprinkle with parsley
- Makes 6 servings with 281 calories per serving
